An easy to make mouth-watering chutney made with an extremely healthy ingredient, doodhi (bottle gourd) is an amazing way to enhance your everyday meal.DOODHI CHUTNEYIngredients300 grams bottle gourd (doodhi), roughly choppedSalt to taste¼ tsp turmeric powder1 cup fresh coriander leaves¼ cup scraped fresh coconut2-3 garlic cloves3 green chilliesA small lemon sized tamarind ball Tempering1 tbsp oil1 tsp mustard seeds1 tsp split skinless black gram (dhuli urad dal)1 tsp Bengal gram (chana dal)1 sprig of curry leaves2 dried red chilliesTo serveIdlisMethod1. Heat sufficient water in a non-stick deep pan. Add the bottle gourd, salt and turmeric powder and mix well. Cook for 8-10 minutes. 2. Drain the bottle gourd into a large bowl and allow to cool to room temperature.3. Transfer the cooled bottle gourd into a mixer jar, add coriander leaves, coconut, garlic, green chillies, tamarind, salt and ¼ cup water and grind to a fine paste. Transfer into a serving bowl. 4. To make the tempering, heat oil in a small pan. Add mustard seeds, split skinless black gram and Bengal gram and sauté till golden brown. Add the curry leaves and dried red chillies. 5.
