DOUBLE CHOCOLATE BROWNIE

Ingredients

¼ cup white chocolate chips
½ cup cocoa powder
1 cup castor sugar
1 tsp baking powder
Salt to taste
1 cup refined flour (maida) + dusting
1 tsp vanilla essence
¼ cup oil
2 eggs
Butter for greasing
3 tbsps chocolate-hazelnut spread
Crushed digestive biscuits for garnishing
Fresh raspberries for garnishing
Fresh blueberries for garnishing
Strawberries for garnishing
Vanilla ice cream to serve

Method

1. Preheat oven to 180˚ C. Grease a glass baking dish with butter and dust with flour, set aside.
2. In a bowl, beat together butter, castor sugar, baking powder, salt, refined flour and cocoa powder.
3. Add vanilla essence, oil, and break in the eggs and whisk well. Add chocolate chips and mix well.
4. Transfer ½ of the mixture into the baking dish, drizzle with chocolate-hazelnut spread and add the remaining batter. Bake for 35-40 minutes.
5. Remove from heat, cut into pieces, garnish with crushed biscuits, raspberries, blueberries, strawberries and serve immediately with vanilla ice cream.
