Double ka Meetha is an Indianised version of bread and butter pudding but with more Indian flavors. Serve this when the rest of the meal is fairly light!DOUBLE KA MEETHA A traditional Hyderabadi meetha – it is just too tastyIngredients 6-8 white bread slices Ghee for deep-frying4-5 cups milk1 cup castor sugar Large pinch of saffron ½ teaspoon green cardamom powder 1 teaspoon rose water1 tablespoon blanched and sliced pistachios ½ tablespoon dried cucumber seeds1 tablespoon chironji + for garnishing ½ tablespoon blanched almond slivers Silver varq for garnishing Method 1. Heat sufficient ghee in a kadai. 2. Cut bread slices into small squares and deep-fry in hot oil till golden brown. Drain on absorbent paper. 3. Heat milk in a deep vessel and cook, stirring occasionally, it reduces to almost half its original volume. 4. Preheat oven to 180º C.5. Add castor sugar to the milk, mix well and cook till the sugar dissolves.6. Add saffron and cardamom powder, mix well and let the mixture come to a boil. 7. Add fried bread squares, rose water, pistachios, cucumber seeds, chironji and almonds and cook for 1 minute. 8. Keep the vessel in the preheated oven and bake for 8-10 minutes.9. Take the vessel out of the oven, garnish with silver varq and serve warm.
