This smoky fenugreek infused chicken gravy is certainly a delightful recipe!

DUM METHI MURGH

Ingredients

750 grams chicken, cut into 2 inch pieces on the bone
2 tbsps ghee
6-8 black peppercorns
2 green cardamoms
2-3 cloves
1 star anise
1 inch cinnamon stick
1 black cardamom
3-4 green chillies, slit
1 large onion, chopped
1 tbsp garlic paste
½ tbsp ginger paste
¾ cup yogurt
¼ tsp turmeric powder
Salt to taste
2½ tbsps almond paste
2 tsps Tata Sampann Kasuri Methi

Method

1. Heat ghee in a deep non-stick pan, add black peppercorns, green cardamoms, cloves, star anise, cinnamon stick, and black cardamom and sauté till fragrant.
2. Add green chillies and sauté for a minute. Add onion, mix and sauté till translucent.
3. Add garlic paste and ginger paste and sauté for 1-2 minutes.
4. Take chicken in a bowl, add yogurt, turmeric powder and salt and mix well. Transfer this into the pan and sauté for 3-4 minutes on high heat.
5. Reduce the heat, add almond paste and Tata Sampann Kasuri Methi and mix well. Add ½ cup water and mix.
6. Seal the rim of the pan with the dough and cover with a lid. Cook for 15-20 minutes, switch the heat off and transfer the gravy into a serving bowl.
7. Serve hot.
