Eclairs | Sanjeev Kapoor Khazana

Not all that hard really to make this French pastry when you have a recipe as excellent as this one. Follow it step by step and present your loved ones with an exotic snack!

ECLAIRS

Ingredients

¾ cup refined flour (maida)
75 grams butter
A pinch salt
3 eggs
Whipped cream for stuffing
Melted dark chocolate for drizzling

Method

1. Preheat oven to 180˚ C. Line a baking tray with parchment paper.
2. Heat 1 cup water in a non-stick pan. Add butter and salt and keep stirring till it melts.
3. Add flour and keep mixing till a dough consistency is formed. Switch off heat and transfer the mixture in a bowl.
4. Add eggs, one at a time, and blend with an electric beater.
5. Fill a piping bag with the prepared mixture and pipe out medium sausage shaped portions, 1 inch apart, on the lined tray.
6. Put the tray in the preheated oven and bake for 20-25 minutes. Remove from heat and cool to room temperature.
7. Halve, stuff with some whipped cream and drizzle some chocolate on top.
8. Serve immediately.
