ECLAIRSIngredients¾ cup refined flour (maida)75 grams butterA pinch salt3 eggsWhipped cream for stuffing Melted dark chocolate for drizzling Method1. Preheat oven to 180˚ C. Line a baking tray with parchment paper. 2. Heat 1 cup water in a non-stick pan. Add butter and salt and keep stirring till it melts. 3. Add flour and keep mixing till a dough consistency is formed. Switch off heat and transfer the mixture in a bowl. 4. Add eggs, one at a time, and blend with an electric beater. 5. Fill a piping bag with the prepared mixture and pipe out medium sausage shaped portions, 1 inch apart, on the lined tray.6. Put the tray in the preheated oven and bake for 20-25 minutes. Remove from heat and cool to room temperature. 7. Halve, stuff with some whipped cream and drizzle some chocolate on top. 8. Serve immediately.
