An Indian classic recipe, the tasty and flavorful egg curry is all set to become a family favorite.

EGG CURRY

Ingredients

7 eggs, hard boiled
4 tbsps oil
1½ tsps cumin seeds
3-4 medium onions, pureed
½ tbsp garlic paste
1 tsp ginger paste
3-4 medium tomatoes, pureed
1 tbsp coriander powder
¼ tsp turmeric powder
2 tsps red chilli powder
1 tsp cumin powder
Salt to taste
Coriander leaves for garnish

Method

1. Heat oil in a deep pan, add eggs and roast till golden brown on both sides. Take them out and set aside.
2. In the same pan, add cumin seeds and let them change colour. Add onion puree and mix well. Sauté till golden brown.
3. Add garlic paste, ginger paste and mix well. Cook for 1 minute. Add tomato puree and mix, cook till the oil separates, stirring occasionally.
4. Add coriander powder, turmeric powder and red chilli powder. Add cumin powder and mix, cook for 1-2 minutes.
5. Add 1 cup water and mix, cook for 1-2 minutes. Add ½ cup water, mix and add the eggs. Gently mix till they are well coated.
6. Add salt, mix, cover and cook for 2-3 minutes.
7. Transfer into a serving plate, garnish with coriander leaves and serve hot.
