An Indian classic recipe, the tasty and flavorful egg curry is all set to become a family favorite.EGG CURRYIngredients7 eggs, hard boiled4 tbsps oil1½ tsps cumin seeds3-4 medium onions, pureed ½ tbsp garlic paste1 tsp ginger paste3-4 medium tomatoes, pureed1 tbsp coriander powder¼ tsp turmeric powder2 tsps red chilli powder1 tsp cumin powderSalt to tasteCoriander leaves for garnishMethod1. Heat oil in a deep pan, add eggs and roast till golden brown on both sides. Take them out and set aside.2. In the same pan, add cumin seeds and let them change colour. Add onion puree and mix well. Sauté till golden brown. 3. Add garlic paste, ginger paste and mix well. Cook for 1 minute. Add tomato puree and mix, cook till the oil separates, stirring occasionally.4. Add coriander powder, turmeric powder and red chilli powder. Add cumin powder and mix, cook for 1-2 minutes.5. Add 1 cup water and mix, cook for 1-2 minutes. Add ½ cup water, mix and add the eggs. Gently mix till they are well coated.6. Add salt, mix, cover and cook for 2-3 minutes.7.
