Egg in the hole in the middle ... I know it's not the most creative moniker, but I didn't make it up. This was -- as far as I know -- my grandpa's specialty breakfast. Here's how I make this spicy version ...

1. Cut a hole in the middle of a piece of bread.

2. Toast the bread lightly on either side.

3. Fry some chopped chili pepper in oil on the skillet (about 1 minute).

4. Fry an egg on top of the chili pepper. Salt and pepper the egg.

5. When the egg is just done enough to hold together, scoop it up, slide the yoke and un-cooked white into the hole in the bread, and fry for about two minutes.

6. Flip the toast to finish cooking the other side of the egg.

This is extremely simple but fun. You can learn to make it in ten seconds (and cooking it doesn't take much longer than that). Getting the egg in the hole can be a little tricky sometimes, but ... yeah, it's not actually that tricky at all.
