PREP TIME: 15 MINUTESCOOK TIME: 30 MINUTESSERVES: 4 INGREDIENTS tuber of yam, diced.5 large tomatoes, chopped.1 medium red onion, sliced.5 cloves of garlic1 tbsp chilli powder6 medium eggs, beaten2 tbsp shrimp powder1 tsp curry powder 1 medium green bell pepper, sliced.4 tbsp of vegetable oilParmesan cheese, grated(garnish)Pinch of Salt DIRECTION Pour water into a saucepan over medium heat, add diced yam, salt and bring to a boil for 10 minutes , take of heat, drain and set aside. Heat vegetable oil in a saucepan over medium heat, add sliced onion, garlic, stir and let sweat for 2mins. Add chopped tomatoes, stir and let simmer down for 7 minutes. Add chilli powder, shrimp powder, curry powder, stir and let simmer for 5mins Add cooked yam, stir then add beaten eggs, cover and let cook for 3 minutes then stir. Adjust salt to your taste, add green bell pepper,stir and let simmer for a minute. Egg sauce yam pottage ready to serve. Garnish with parmesan cheese.
