Egg Sauce Yam Pottage

PREP TIME: 15 MINUTES
COOK TIME: 30 MINUTES
SERVES: 4

INGREDIENTS
tuber of yam, diced.
5 large tomatoes, chopped.
1 medium red onion, sliced.
5 cloves of garlic
1 tbsp chilli powder
6 medium eggs, beaten
2 tbsp shrimp powder
1 tsp curry powder
1 medium green bell pepper, sliced.
4 tbsp of vegetable oil
Parmesan cheese, grated(garnish)
Pinch of Salt

DIRECTION
Pour water into a saucepan over medium heat, add diced yam, salt and bring to a boil for 10 minutes , take of heat, drain and set aside.
Heat vegetable oil in a saucepan over medium heat, add sliced onion, garlic, stir and let sweat for 2mins.
Add chopped tomatoes, stir and let simmer down for 7 minutes.
Add chilli powder, shrimp powder, curry powder, stir and let simmer for 5mins
Add cooked yam, stir then add beaten eggs, cover and let cook for 3 minutes then stir.
Adjust salt to your taste, add green bell pepper,stir and let simmer for a minute.
Egg sauce yam pottage ready to serve. Garnish with parmesan cheese.
