Egg & Spinach Breakfast Pockets

I'm really excited to be able to share another recipe for my cookbook My Fussy Eater.

These are my Egg & Spinach Breakfast Pockets. They're easy to make and so much fun to eat. Kids will love the novelty factor and they're perfect to hand to busy teenagers who are always rushing out the door without eating anything!

Ingredients:
- 1 large tortilla wrap
- 35g fresh spinach
- 40g grated cheese
- 1 medium egg

Bake at 180c / 350f for 20 minutes
