KERALA STYLE CHRISTMAS CAKE
Preparation time 15 minutes
Cooking time 35-40 minutes at 170c
Serve 2-4

Ingredients
For Caramelized Jaggery
100 gm Jaggery
2-3 tbsp Water
250 gms Butter, salted

For Kerala Christmas Cake
cup Dessicated coconut
tsp Each Mixed spice powder (cinnamon, nutmeg, clove)
tsp Black peppercorns, crushed
cup Tutti Frutti
cup black Raisins, chopped
tbsp Orange, rind
300 gms Refined flour
1 tin Nestl MILKMAID
cup Cashew nuts, chopped
cup Orange juice
1 tbsp Tutti frutti
1 tbsp black Raisins
tsp Baking soda
tsp Baking powder

For Garnish
1 tbsp Tutti frutti
Icing sugar
Dessicated coconut
Candied cherry
fresh Mint sprig

Process
For Caramelized Jaggery
In a pan, add in jaggery, 2-3 tbsp water and caramelize it until it turns dark golden brown.
Add butter and mix it well.
Allow it to cool down and keep it aside for further use.

For Kerala Christmas Cake
In a bowl, caramelized jaggery, desiccated coconut, black peppercorns, tutti frutti , black raisins, orange rind and mix it well.
Add flour, Nestl MILKMAID, cashew nuts, orange juice and make a smooth batter.
Fold in tutti frutti, black raisins, baking soda and give it a good mix.
Transfer it to a greased baking tray and top it up with tutti frutti.
Place it in a preheated oven and bake it for 35-40 minutes at 170c until cooked well.
Gently demold the cake and transfer it to a serving dish.
Garnish it with tutti frutti, icing sugar, candied cherries and mint sprig.
Serve.
