Eggplant Papoutsakia Greek-Style Stuffed Eggplant Topped with Bechamel

For the eggplant lover in all of us is this super delicious eggplant papoutsakia recipe. Or otherwise known as Greek style meat sauce stuffed eggplants topped in a bechamel sauce. Although it may look complicated, it really isn't. Just break down the recipe into its three main parts: 1) Eggplant prep. 2) Greek style meat sauce. 3) Bechamel sauce. That's it! Once you divide this recipe up, you can very easily conquer it LOL Truth is, it looks way more complicated than it is. And like I've said a million times... if I can do it, so can you!!! INGREDIENTS LIST

* 2 eggplants
* 2 cloves garlic
* 1/2 cup chopped parsley
* 1 onion
* 1 lb. pork sausage
* 1 tbsp. tomato paste
* 14oz crushed tomatoes
* 1 cup water
* 1/2 tsp. ground cinnamon
* 1 bay leaf
* 1/2 stick butter
* 4 tbsp. flour
* 2 cups milk
* 1/8 tsp. ground nutmeg
* Salt & pepper to taste
