Elgin Texas Hot Guts Sausage Recipe This is our take on how to make a Texas Hot Links sausage recipe, or Texas hot guts sausage recipe... There are so many variations of this beef bbq smoked sausage made in Texas that it's hard to keep track. Every pitmaster has a smoked hot links recipe. Some hot links are smoked beef sausage, some are bbq beef and pork sausages.

Ingredients:
3Kg (6.5 pounds) pork butt / beef chuck mix
2 medium green jalapeño
25g (30 mL / 2 Tbsp) cracked black peppercorns
17g (30 mL / 2 Tbsp) fresh ground black pepper
16g (30 mL / 2 Tbsp) mild paprika
21g (30 mL / 2 Tbsp) garlic powder
30g - 45g (30 mL - 45 mL  / 2-3 Tbsp) coarse salt
5g (15 mL  / 1 Tbsp) ground sage
5g (10 mL / 2 tsp) chipotle chile powder
10g (15 mL / 1 Tbsp) onion powder
250 mL ice water
4 - 5' pork sausage casings

Method:
Cut up the pork and beef so that it's in strips or cubes that will fit through your grinder.
Place the meat, and the sliced jalapeños in the freezer to firm up for about an hour.
Mix together your spices, and prep your casings.
Mix the spices into the meat, and then grind through a coarse plate along with the jalapeños.
Switch to a fine plate, add the water to the meat mixture and then grind again.
Grind a third time, if you want an emulsified sausage.
Set up your stuffer with hog casings and stuff.
Poke holes to allow air to escape and then refrigerate overnight uncovered.
Package and freeze any that you are not cooking immediately.


Tips:
70% lean 30% fat
1% - 2% salt by weight of meat and fat seems to give the 'right' saltiness for most people.
