FATTA FAT CHUTNEY - BOTTEL GOURD IN CURD CHUTNEY | Vahchef - VahRehVah

Its a great combination of bottlegourd and curd.

Ingredients:
Bottle gourd (pieces) 1 Cup
Yogurt 1 Cup
Salt To taste
Green chilli 3-4 Numbers
Mustard seeds 1/2 Teaspoons
Ginger (small pieces) 3 Numbers
Raw coconut pieces 1/4 Cup
Coriander 2 Bunch
Oil 2 Tablespoons
Red chilli 3 Numbers
Cumin seeds 1/4 Teaspoons
fenugreek seeds 1 Pinch
Urad dal 1/2 Teaspoons
Turmeric 1 Pinch
Hing 1 Pinch
Curry leaves 2 Stricks

Directions:

1. First peel and chop the bottle gourd into small pieces

2. In a vessel boil some water and add the bottle gourd pieces, salt and put the lid on and let it cook till the bottle gourd pieces are tender.

3. In a blender add green chilli, ginger, mustard seeds, some raw coconut pieces, 2 bunches of coriander and 2 to 3 tsp of yogurt and blend it all together and make a coarse paste, pour this into a bowl.

4. In this add ½ cup of yogurt, salt and mix it well and also add cooked bottle gourd pieces

5. Heat oil in a pan for seasoning, add red chilli, cumin seeds, fenugreek seeds, urad dal, pinch of turmeric, hing and curry leaves fry for a minute then pour this tempering on the top of the bottle gourd and yogurt chutney and mix it well.

6. serve this chutney with Rice or Roti.
