Fish Burger | Cooksmart | Sanjeev Kapoor Khazana

Boneless fish mixed with jalapenos, onions, shaped into burgers, deep-fried and served with brown buns

FISH BURGER

Ingredients

4 boneless fish fillet, cut into pieces
4 brown burger buns
8-9 jalapenos
7-8 curly parsley sprigs
4 medium onions, roughly chopped
Salt to taste
8 tsps grainy mustard paste
½ cup mayonnaise
8 tbsps olive oil
150 gms mozzarella cheese
A few iceberg lettuce leaves
1 medium onion, cut into thin rings
Some micro greens

Method

1. Grind together jalapenos, parsley, onion, boneless fish pieces, salt, 4 tsps grainy mustard paste and transfer into a bowl.
2. Halve burger buns horizontally and toast in a non-stick pan.
3. Dampen hands, take ¼ portion of the fish mixture and shape into a pattie.
4. Mix mayonnaise and remaining grainy mustard paste in a small bowl and mix well.
5. Remove burger halves from the pan and place on plates.
6. For each burger heat 2 tbsps olive oil in a non-stick pan, place 1 fish pattie in it and cook.
7. Apply mayonnaise-mustard paste mixture over each bun half.
8. Cut slightly thick slices of mozzarella cheese.
9. Flip the fish pattie when the underside is golden. Keep two cheese slices over the pattie, cover the pan and cook till cheese begins to melt.
10. Keep a few iceberg lettuce leaves over the lower half of the bun.
11. When both sides of the pattie are golden, lift it slowly off the pan and place over the lettuce leaves. Cover with the top half of the bun and serve immediately garnished with a few onion rings and micro greens.
