Fluffy veg omelette Chef Harpal Singh

fluffy veg omelette also known as besan chilla is a delicious and nutritious vegan alternative to traditional egg omelettes. It's made from besan (gram flour), which is a gluten-free and protein-rich flour.

Ingredients Quantity
quantity chickpeas boiled 1 cup
Oil 1 tbsp
Gram flour 1 cup
Salt to taste
Asafoetida tsp
Red Chilli powder 1 tsp
Turmeric powder tsp
Green chilli chopped 3 no
Onion chopped 1 no
Tomato chopped 1 no
Fresh coriander chopped 1 tbsp
Gram flour 3 tbsp
Method
Take chickpeas and cooked chickpeas water in a mixer jar. Grind it into thin paste.
Transfer the cooked chickpea water into a big bowl and beat until frothy.
Then take out the froth in another bowl.
Take a pan on medium flame and add oil.
Now add gram flour in chickpea water. Add chickpeas paste and mix well.
Add salt, asafoetida, red chilli powder, turmeric powder, green chilli, onion, tomato, fresh coriander and mix well.
Add gram flour to adjust the batter and mix well.
In another bowl, transfer the froth. Add some bather and fold it to make it fluffy.
Pour some batter in a frying pan and cover the pan on lid as it cooks under steam.
Serve the hot with mango pickle.
