I modified the recipe for this live. What I used:

1 head of Napa cabbage
1 long Napa cabbage
2 large pink radishes radishes
1/2 of a large Korean radish
2 cups of grated sunchokes
2 cups grated carrots
1 medium red onion, thinly sliced
3 tbsp non-iodized sea salt
7 hot Thai chilis
1.5 tbsp gochugaru flakes or other chili flakes
1/2 tsp red pepper flakes
2 tbsp freshly grated garlic
2 tbsp freshly grated ginger
1/2 cup lemon juice
2 tbsp date sugar

HOW TO:

This recipe made almost a gallon worth - I put it in 3 liter sized mason jars. Youll need large mason jars, glass fermenting weights and air lock lids to make them along with a large bowl for mixing and an optional pickle packer to press down the ferrment.
Take a few leaves off the cabbage to use as toppers. Thinly slice the rest of the cabbage and matchstick all of the radishes. Slice the red onion and grate the sunchokes and carrots. Place everything split across the 2 bowls and add the salt (3 tbsp to bowl). With clean hands massage the mix and really squeeze it for a couple minutes until super soft. Cover each bowl with a towel and let sit for 30 mins for the liquid to release.
Once super soft, add the date sugar, lemon juice, garlic, ginger, gochugaru, red pepper flakes and hot chilies and mix again
Stuff mason jars with mix and liquid until almost full (where the glass bends) add a cabbage leaf to the top and more liquid from the marinating only if needed. Forcefully press a glass weight into the jar so EVERYTHING is fully submerged under the cabbage leaf. Leave about an inch of space from the rim. Top with an airlock lid and allow to ferment for 1-2 weeks. Once ready, taste and transfer to the fridge with a normal lid. Eat and enjoy in meals!
