Jen recreates this New Orleans classic sandwich with the "other white meat" for the first time.Ingredients—1 lb alligator, cubed1 cup all-purpose flour ½ cup yellow cornmeal1 tsp cayenne powder2 tsp smoked paprika2 tsp garlic powder2 tsp onion powder½ tsp dried oregano½ tsp dried thymeSalt and pepper to taste1 Buttermilk 1 egg Sliced tomatoesShredded iceberg lettuceFrench breadMayo Hot sauceCanola oil for fryingSteps—In a bowl, combine flour, cornmeal, cayenne powder, half of the smoked paprika, garlic powder, onion powder, oregano, thyme, and salt and pepper. In another bowl, combine buttermilk, egg, and the other half of the seasonings. Add cubed alligator to the wet bowl and let marinate for at least 30 minutes. Heat oil in a cast iron skillet on medium-high. Dredge marinated alligator in the dry bowl and shake off any excess. Fry in oil for about 5-6 minutes or until golden brown. Be sure not to crowd to skillet. Set aside on paper towel or a drying rack to drain. Slice bread in half and toast until lightly golden. Spread both sides with mayo. Layer shredded lettuce, fried alligator, hot sauce, and tomatoes.
