Slice off the very tips of the plantain.Green plantains can be hard to peel. You can cut the peel lengthwise into thin strips and pull the peeling strips away, or slice the length of the peel and then work the peel away from the plantain using your thumbs or a spoon.Cut the peeled plantain into discs about to an inch thick. I prefer thinner slices, about inch thick.Heat a skillet and oil on medium heat. Add in the sliced plantains.Season the plantains in the skillet.Fry 1-2 minutes and turn and fry 1-2 minutes more.Remove plantains from skillet and drain on a paper towel.Place on a flat surface and smash flat to desired thickness.
