FROZEN BANANA SNACK BAR RECIPE
2 large bananas
1/4 cup peanut butter
1/4 cup dry roasted peanuts chopped
1/4 cup chocolate chips
1.5 tsp coconut oil
1/4 tsp sea salt

Line a quarter sheet pan with parchment paper and set it aside. Peel and slice each banana in half lengthwise, and then horizontally.

Evenly spread peanut butter amongst all eight banana pieces and sprinkle half of the chopped peanuts over top. Pop in the freezer for 45 minutes to set up.

Combine chocolate chips and coconut oil in a small microwave-safe bowl and microwave on low in 20-second intervals until melted, stir well. Drizzle half the melted chocolate over the peanut butter, top with the remaining peanuts, and then drizzle the remaining chocolate over the top.

Place in the freezer for 2 hours or until set and enjoy. Transfer the remaining bars into an airtight container and store them in the freezer for up to one month.
