Fruit Cake Bars | The Dessert Queen - Neelanjali | Sanjeev Kapoor Khazana

Cranberries, raisins and prunes soaked in brandy add a sinfully delicious twist to this fruit cake.

FRUIT CAKE BARS - (Serves - 4)

Ingredients

300 grams refined flour (maida) + for dusting
1 cup dried cranberries, prunes and raisins, soaked in brandy for 2 days
227 grams unsalted butter + for greasing
350 grams brown sugar
3 eggs
½ teaspoon clove powder
½ teaspoon nutmeg powder
½ teaspoon salt
1 teaspoon cinnamon powder
1 teaspoon vanilla essence
120 grams pecans
Icing sugar for dusting

Method

1. Preheat oven to 180° C. Grease a square baking tin with some butter and dust with some flour.
2. Cream together butter and brown sugar till light and fluffy. Add eggs, one by one, and beat again.
3. Sift together flour, clove powder, nutmeg powder, salt and cinnamon powder into the butter-sugar mixture. Add vanilla essence and fold well.
4. Add mixed fruits with the brandy. Break pecans into smaller pieces and add. Mix well.
5. Transfer the mixture in the lined tin filling 3/4th and level it. Place it in the preheated oven and bake for 20-25 minutes. Remove from oven, cool and demould.
6. Cut into bars, dust with icing sugar and serve.
