Rice cooked in coconut milk and served topped with sautéed fruits and brown sugar

FRUITY COCONUT RICE

Ingredients

1 cup rice, soaked, pressure cooked till soft
1 can mixed fruits (pineapple, peach, papaya)
2 cups coconut milk
2 tbsps butter
7-8 tbsps brown sugar
2 tbsps chopped pistachios
1 tbsp slivered almonds

Method

1. Heat coconut milk in a non-stick pan, add cooked rice, mix well and simmer.
2. Heat butter in another non-stick pan, add mixed fruit and toss. Add 3 tbsps brown sugar and mix.
3. Add 4-5 tbsps brown sugar to the rice mixture and mix well till the sugar melts.
4. First put the rice mixture in the serving bowl, sprinkle pistachios over it. Place fruit mixture over them and sprinkle almonds. Serve.
