Gajar Matar ki Sabzi | Sanjeev Kapoor Khazana

We have carrots to your rescue after all this underestimated vegetable adds a lot of nutritive value and dietary fibers to your food. As Bugs Bunny would say “Carrots are divine, you get a dozen for a dime, and it’s maaaa-gic!” Go ahead and try our Gajar Matar ki Sabzi recipe.

GAJAR MATAR KI SABZI

Ingredients

4 medium (400 grams) carrots, cut into ½ inch cubes
¾ cup fresh green peas
2 tablespoons oil
1 teaspoon cumin seeds
1 inch ginger, cut into thin strips
1 teaspoon turmeric powder
1 teaspoon red chilli powder
2 teaspoons coriander powder
Salt to taste
½ teaspoon dried mango powder
1 tablespoon lemon juice
2 tablespoons chopped fresh coriander

Method

1. Heat oil in a kadai and add cumin seeds. As they begin to change colour add the ginger. Sauté for thirty seconds and add carrots and peas.
2. Add turmeric powder, red chilli powder and coriander powder and stir to mix well. Add salt, stir well and sprinkle quarter cup of water. Cover and cook on low heat, stirring once or twice, till carrots and peas are tender. Sprinkle dried mango powder and mix.
3. Add lemon juice and remove from heat.
4. Garnish with fresh coriander and serve with hot rotis.
