Gajar Matar Pulao

Ingredients Quantity
Basmati Rice Soaked 2 Cups
Carrot Cut Into Cubes 1 Cup
Green Peas 1 Cup
Vanapasati 3-4 Tbsp
Bay leaf 2
Black Cardamom 2
Peppercorn 1
Cumin Seeds 1
Cloves 4-5
Ginger Juliennes 1 Inch
Mint Leaves 8-10
Water As Required
Method
• Peel the carrots, cut into small cubes and keep aside.
• Heat 3-4 tbsp. vanaspati in a pressure cooker and add bay leaf, black cardamom, peppercorn, cumin seeds, cloves, carrot, green peas, and sauté for 2-3 min.
• Add ginger juliennes, rice, salt, mint leaves, and mix well.
• Add water and pressure cook for 3 whistles.
• After 3 whistles once the pressure cooker cools open and give a gentle mix.
• Transfer to a serving bowl.
• Garnish with mint sprig and serve hot with raita, papad, and pickles.
