These puris are filled with the goodness of carrots that not only give an amazing colour to the puris but also add a delicately sweet flavor and aroma which tastes great with any sabzi.

GAJAR PURI

Ingredients

1½ cups whole wheat flour
1 cup carrot puree
½ tsp red chilli powder
¼ tsp carom seeds (ajwain)
Salt to taste
1 tbsp freshly chopped coriander leaves
1 tbsp oil + for greasing+ for deep frying

Method

1. In a bowl, add whole wheat flour, red chilli powder, carom seeds, salt, chopped coriander, 1 tbsp oil, and carrot puree and mix well. Knead to a stiff dough.
2. Divide the dough into equal portions. Grease the worktop with oil, place and roll out each portion into a small disc or puri.
3. Heat sufficient oil in a kadai, deep fry the prepared puris till puffed up.
4. Serve hot with aloo sabzi.
