Tomato Ketchup ( ) - cup
Salt () - to taste
Water () - cup
Soya Sauce Light ( ) - cup
Sugar () - a pinch
Cornstarch () - 2 tsp
Water () - a dash

For Vegetables:
Water () - 2 cups
Broccoli, florets () - cup
Gobi, florets () - cup
Carrots, sliced () - cup
Salt () - to taste
Beans, diced () - cup

For Assembling:
Oil () - 2tbsp
Ginger () - 1 tsp
Garlic () - 1 tsp
Mushroom (), Sliced - cup
Onion (), Diced - cup
Salt () - to Taste
Red Capsicum, diced ( ) - cup
Yellow Capsicum, diced ( ) - cup
Green Capsicum, diced ( ) - cup
Black Pepper ( ), Crushed - a pinch
Schezwan Sauce ( )
Cornstarch () - Optional
Spring Onions ( ), Chopped - handful

For Burnt Garlic Fried Rice:
Oil () - 3tbsp
Garlic (), Chopped - 2 tbsp
Dry Red Chilli ( ), Sliced - 1 no
Onion (), Chopped - 3 tbsp
Red Capsicum, Chopped ( ) - 1 tbsp
Yellow Capsicum, Chopped ( ) - 1 tbsp
Green Capsicum, Chopped ( ) - 1 tbsp
Rice (), Boiled - 2 cups
Soya Sauce ( ) - 2tbsp
Black Pepper ( ), Crushed - a pinch
Salt () - To Taste
Spring Onions ( ), Chopped - handful
Coriander Stems ( ), Chopped - 1tbsp
Vinegar () - a dash

Tips and Tricks:
- Chinese people use day-old rice to make fried rice as it has just the right amount of hydration.
- Toasting black pepper before crushing releases a bouquet of flavour.
