Delicious paneer and garlicky mixture stuffed into puff pastry paranthas and baked till perfection.GARLIC PANEER PUFFIngredients1 tbsp chopped garlic400 grams cottage cheese (paneer), cut into ½ inch cubes4 puff pastry parantha2 tbsps oil½ tbsp finely chopped ginger2-3 green chillies, chopped1 spring onion bulbs, chopped1 small red capsicum, cut into 1 inch pieces1 medium onion, cut into 1 inch pieces and layers separated1 small green capsicum, cut into 1 inch piecesSalt to taste½ tsp red chilli flakes1 tbsp red chilli sauce2 tsps soy sauce2 tbsps corn flour slurry2 tbsps chopped spring onion greensMelted butter for brushingMilk wash for brushingBlack sesame seeds for sprinklingMethod1. Preheat the oven at 180ºC.2. Heat oil in a non-stick pan. Add garlic, ginger and green chillies and sauté for a minute. Add spring onion bulbs and sauté for 1 minute.3. Add red capsicum, onion, and green capsicum and sauté for 1-2 minutes. 4. Add salt, red chilli flakes, red chilli sauce, and soy sauce and mix well. 5. Add cottage cheese and mix till well combined.6. Add corn flour slurry and mix well. Cook till the mixture thickens slightly. Add spring onion greens and mix well. Take the pan off the heat and allow to cool slightly.7. To make the puff, take a puff pastry parantha on a worktop. Place a generous portion of the mixture in the centre. Fold all the four sides to make rectangular puff.8. Brush melted butter on a lined baking tray. Place the puff on it and brush some milk wash on it. Sprinkle sesame seeds and bake in the preheated for 15-20 minutes.9. Take the baking tray out of the oven and allow to cool slightly.
