This south Indian ghee rice recipe preparation is simple yet irresistible. This aromatic mildly spiced rice is done by steaming ghee sautéed with rice grains, nuts and spices.GHEE RICE - (Serves - 4)Ingredients1½ cups basmati rice, soaked 2½ tablespoons ghee 2 bay leaves3 green cardamoms 1 inch cinnamon 1 star anise4-5 cloves 1 teaspoon fennel seeds (saunf)1 inch ginger, grated6-8 raisins 8-10 cashewnuts 1 large onion, sliced1 sprig curry leaves Salt to taste Fried curry leaf sprig for garnishing Method 1. Heat ghee in a non-stick pan. Add bay leaves, cardamoms, cinnamon, star anise, cloves, fennel seeds and ginger, mix and sauté till fragrant. 2. Add raisins, cashewnuts and onions, mix and sauté till onions turn golden brown. 3. Add curry leaves and mix. Add rice and mix well. Add 3 cups water, salt, stir to mix, cover and cook till the rice is fully done. 4.
