GINGER BISCUIT PUDDING

Ingredients

10-12 ginger biscuits
2-3 tablespoons coffee powder
1 cup whipped cream
Crushed biscuits for garnishing
Dark chocolate shavings for garnishing
Chocolate sauce
¼ cup grated dark chocolate
1 tablespoon butter
½ cup milk


Method

1. To make coffee decoction, mix together coffee powder and 1 cup hot water.
2. Arrange the biscuits on a glass tray.
3. To make chocolate sauce, heat butter in a non-stick pan. Add 2 tablespoons chocolate and stir constantly till it melts. Add milk little by little, stirring continuously. Add remaining chocolate, mix and cook till a saucy consistency is achieved. Remove from heat and cool slightly.
4. Pour choclate sauce all over the biscuits, add dollops of whipped cream and spread using a spatula. Top with crushed biscuits and chocolate shavings.
5. Refrigerate the pudding until set.
6. Serve chilled.
