Ingredients for kabab
Chicken mince 800g
Salt to taste
Onion (minced & squeezed) 1/2 cup
Red chili powder 1 tbsp
Cumin powder 1 tbsp
Coriander powder 1 tbsp
Garam masala powder 1 tbsp
Turmeric powder 1 tsp
Coriander fresh 2 tbsp
Mint fresh 2 tbsp
Green chilies 1 tbsp
Ginger garlic paste 1 tbsp
Ghee 1 tbsp
Oil for frying
Ingredients for gravy:
Onion (sliced) 3/4 cup
Tomato puree 1 cup
Oil 1 cup
Green chilies 2-3
Cumin seeds 1 tsp
Salt to taste
Red chili powder 1 tbsp
Red chili flakes 1/2 tbsp
Coriander powder 1/2 tbsp
Cumin powder 1/2 tbsp
Turmeric powder 1 tsp
Yogurt 1/2 cup
Dried plums 4-5
Ginger garlic paste 1 tbsp
Ingredients for rice boiling:
Rice 2 cups
Oil 2 tbsp
Vinegar 2 tbsp
Salt to taste
Cumin seeds 1 tsp
Curry leaves 2
Star anise 1
Cinnamon stick 1
Water as required
Garnish:
Orange food color 1 tsp
Coriander leaves 1/4 cup
Mint leaves 1/4 cup
Green chilies 1/4 cup
Tomato slices 1/4 cup
Lemon slices 1/4 cup

Directions:
In a bowl mix chicken mince, salt, onion, red chili powder, cumin powder, coriander powder, garam masala powder, turmeric powder, coriander, mint, green chilies, ginger garlic paste and ghee. Refrigerate the mixture for 2 hours at least.
Take some mince mixture, thread them on steel skewers and make small round kababs. Pull them out and place on a plate.
Heat oil in a frying pan and fry your kababs in it until they are 50% cooked. Dish them out and set aside.
Simmer water in a pot, add salt, vinegar, cumin seeds, star anise, curry leaves, cinnamon stick, rice and boil until rice is 80% cooked. Drain and set aside.
In another pan heat oil, add cumin seeds and sauté for a minute. Then add onion, ginger garlic paste and cook for another 2 to 3 minutes.
Add tomato puree, green chilies, salt, red chili powder, red chili flakes, coriander powder, cumin powder, turmeric powder and cook until gravy leaves oil.
Then add prepared kabab, dried plum, yogurt and cook on low flame for 7 to 10 minutes or until gravy is thick.
Finally, in a pot spread layer of gravy, cover it with boiled rice, top it again with gravy, then rice and garnish. Drizzle food color on top, add some more garnish and water.
Cover the lid and let it simmer on low flame for 10 to 15 minutes. Your gola kabab biryani is ready.
