Green Gazpacho | Cooking with California Walnuts | Sanjeev Kapoor Khazana

This cold soup is healthy and rejuvenating too.

GREEN GAZPACHO

Ingredients

2 medium cucumbers
2 medium green capsicums
1 medium green apple
2 tablespoons finely chopped celery
1 green chilli
6-8 walnut kernels, roughly chopped
1 teaspoon chopped garlic
Salt to taste
Crushed black peppercorns to taste and sprinkling
1 tablespoon olive oil + for drizzling
1 teaspoon vinegar
Olive oil for drizzling

Method

1. Peel and slice cucumbers. Core and cut capsicums and apple into cubes. Transfer these into a blender jar.
2. Add celery, broken green chilli, walnuts, garlic, salt, crushed peppercorns, olive oil and vinegar to a smooth mixture.
3. Strain and pour into individual bowls. Drizzle some olive oil and sprinkle some crushed peppercorns.
4. Serve immediately.
