Green Pea And Goat Cheese Risotto | Sanjeev Kapoor Khazana

A delicious Risotto for a fancy dinner.

GREEN PEA AND GOAT CHEESE RISOTTO

Ingredients

1 cup fresh green peas puree
2 tbsps goat cheese + for garnish
1½ cups risotto rice
4 tbsps olive oil
3 tbsps chopped garlic
1 medium onion, finely chopped
4-6 tbsps white wine
6 cups vegetable stock
2 tbsps fresh cream
2 tsps butter
Micro greens for garnish

Method

1. Heat olive oil in a non-stick pan, add garlic, onion, and sauté till translucent.
2. Add rice and sauté well. Add white wine and mix well.
3. Add 3 cups vegetable stock, salt and mix well. Cook for 4-5 minutes or till the moisture is almost absorbed, stirring occasionally.
4. Add the remaining stock, mix well and cook till the moisture is almost absorbed, stirring occasionally.
5. Add green peas puree and mix well. Cook till the rice is cooked.
6. Add fresh cream, butter and goat cheese, switch the heat off and mix well.
7. Garnish with goat cheese and micro greens. Serve hot.
