GREEN PEA AND GOAT CHEESE RISOTTOIngredients1 cup fresh green peas puree2 tbsps goat cheese + for garnish1½ cups risotto rice 4 tbsps olive oil3 tbsps chopped garlic1 medium onion, finely chopped4-6 tbsps white wine6 cups vegetable stock2 tbsps fresh cream2 tsps butterMicro greens for garnishMethod1. Heat olive oil in a non-stick pan, add garlic, onion, and sauté till translucent.2. Add rice and sauté well. Add white wine and mix well.3. Add 3 cups vegetable stock, salt and mix well. Cook for 4-5 minutes or till the moisture is almost absorbed, stirring occasionally.4. Add the remaining stock, mix well and cook till the moisture is almost absorbed, stirring occasionally.5. Add green peas puree and mix well. Cook till the rice is cooked. 6. Add fresh cream, butter and goat cheese, switch the heat off and mix well.7. Garnish with goat cheese and micro greens.
