GREEN PEA MINT SOUPIngredients2 cups fresh green peas½ cup mint leaves2 tsps butter1 tbsp chopped garlic1 small onion, chopped2-3 fresh thyme sprigsSalt to taste4 cups vegetable stock + to adjust consistencyBlack pepper powder to tasteFresh cream for garnishMethod1. Heat butter in a non-stick wok, let it melt. Add 1 tbsp chopped garlic and sauté till golden brown.2. Add 1 small onion, chopped and sauté till translucent. Add 2-3 fresh thyme sprigs, green peas and salt, mix well. 3. Add 4 cups vegetable stock and let it come to a boil. Reduce the heat and cook till the peas are soft and cooked. Discard the thyme sprigs.4. Take it off the heat, add mint leaves and allow the mixture to cool slightly. Transfer mixture in a blender jar and blend to a fine puree.5. Add the puree into the same pan and place it back on heat. Add stock to adjust the consistency.6. Add black pepper powder and mix well. Let the soup come to a boil.7.
