Green Peas and Pista Burfi | Cooksmart | Sanjeev Kapoor Khazana

Green Peas And Pista Burfi is a dessert made with green peas, pista/pistachio and mawa/milk solids. This might be a unique combination but do try it and you'll find that it is delicious.

GREEN PEAS AND PISTA BURFI

Ingredients

1 cup shelled green peas, blanched
½ cup pistachios, blanched, peeled and thinly sliced
3 tbsps pure ghee + for greasing
2 cups grated khoya/mawa
¾ cup sugar
¾ tsp green cardamom powder

Method

1. Put green peas in a mixer jar, add a little water and grind.
2. Heat ghee in a non-stick pan, add ground peas and saute, stirring continuously till all the moisture evaporates.
3. Add mawa and mix well and continue to saute till well blended. Add sugar and mix and saute.
4. Grease an aluminium tray with ghee.
5. Add green cardamom powder and mix and saute. Add half the pistachios and mix well.
6. Pour the mixture into the tray and spread evenly. Sprinkle remaining pistachios over and let it cool down to room temperature.
7. Keep the tray in the refrigerator to set. Cut into small squares and serve.
