Green Peas Sandwich

Chock full of nutrients required for growth, green peas make a surprising filling for sandwiches! Full of fibre and protein…kids favourite sandwich made healthy by replacing high calorie and fattening thousand island dressing…with a healthier version which is made using curds and very little cream..

Preparation Time: 15 minutes.
Cooking Time: Nil.
Makes 4 sandwiches.

1 cup boiled and coarsely crushed green peas
8 toasted whole wheat bread slices
12 tomato slices
Salt for sprinkling

To be mixed into a thousand island dressing (makes approx. ¼ cup)
2 tbsp thick fresh curds (dahi)
1 tbsp fresh cream
1 tsp finely chopped onions
1 tsp finely chopped capsicum
2 tsp tomato ketchup
½ tsp sugar
¼ tsp chilli sauce
¼ tsp finely chopped green chillies
¼ tsp mustard (rai / sarson) powder
Salt to taste

1. Combine the green peas and the prepared thousand island dressing in a deep bowl and mix well.
2. Divide the stuffing into 4 equal portions and keep aside.
3. Place a bread slice on a clean dry surface.
4. Spread a portion of the stuffing evenly on it and place 3 tomato slices over it. Sprinkle a little salt over it, and sandwich it using another bread slice.
5. Repeat steps 2 to 4 to make 3 more sandwiches.
Serve immediately.

Handy Tip
If your kids are fussy, be innovative and cut the sandwiches into different shapes like triangles, circles or even teddy bears or pussycats.
