GREEN PRAWN PULAO

Ingredients

1½ cups rice, soaked for 1 hour and drained
12-16 small prawns, shelled and deveined
2 tablespoons oil
1 star anise
6-8 black peppercorns
3-4 garlic cloves, finely chopped
1 large onion, sliced
Salt to taste
¼ cup coconut milk
Fresh coriander sprigs for garnishing
Sol kadhi for serving
Paste
1 medium bunch fresh coriander, cleaned
2-3 tablespoons scraped fresh coconut
4-6 garlic cloves
1 inch ginger, roughly chopped
1-2 green chillies
Salt to taste
6-8 black peppercorns
1 tablespoon lemon juice

Method

1. To make paste, blend together coriander leaves, coconut, garlic, ginger, chillies, salt, peppercorns and lemon juice. Transfer to a bowl.
2. In a bowl add prawns and mix with 3 tablespoons green paste. Set aside to marinate.
3. Add prawns, mix well and set aside to marinate.
4. Heat oil in a non-stick pan. Add star anise, peppercorns, garlic and onion, mix and sauté till the onions turn translucent. Add 4 tablespoons green paste and mix well.
5. Add rice and cook for a minute. Add salt and 2 cups water, mix well and bring to a boil.
6. Add marinated prawns, mix, cover and cook till fully done. Add coconut milk, mix well and simmer for 5 minutes.
7. Garnish with coriander sprigs and serve immediately with solkadhi.
