Green Tomato Salsa | Dips Sauces and More | Sanjeev Kapoor Khazana

This salsa is different as it is made with green tomatoes instead of red. Do try !

GREEN TOMATO SALSA

Ingredients

4 medium green tomatoes
Olive oil as required
1 small onion, finely chopped
1-2 green chillies, finely chopped
2 teaspoons chopped fresh coriander leaves
Salt to taste
A pinch castor sugar
Juice of ½ lemon
Corn chips for serving

Method

1. Preheat oven to 200° C.
2. Cut tomatoes into roundels.
3. Grease a baking tray with some olive oil. Place the tomato roundels, brush some olive oil, and sprinkle some salt on top.
4. Put the tray into the preheated oven and roast for 15-20 minutes. Remove from oven and slightly cool.
5. Put the roasted tomato roundels on the worktop, chop and transfer in a bowl. Add onion, green chillies, coriander leaves, salt, castor sugar, lemon juice and 2 teaspoons olive oil and mix well.
6. Serve with corn chips.
