Preheat oven to 200° C.2. Cut tomatoes into roundels.3. Grease a baking tray with some olive oil. Place the tomato roundels, brush some olive oil, and sprinkle some salt on top.4. Put the tray into the preheated oven and roast for 15-20 minutes. Remove from oven and slightly cool.5. Put the roasted tomato roundels on the worktop, chop and transfer in a bowl. Add onion, green chillies, coriander leaves, salt, castor sugar, lemon juice and 2 teaspoons olive oil and mix well. 6. Serve with corn chips.
