Made with green tomatoes and tamarind pulp, this extraordinary flavourful rice is surely going to be a family favourite.GREEN TOMATO TAMARIND RICEIngredients 6 small green tomatoes5 tbsps tamarind juice3 cups Basmati rice, boiled 1 tbsp ghee1 tsp mustard seeds½ tsp cumin seeds¼ tsp asafoetida (hing)6-8 curry leaves1 tsp split skinless black gram (urad dal)3-4 green chillies, slit½ inch ginger, finely chopped1½ tsps Bengal gram (chana dal)2 tbsps raw peanuts, crushedSalt to taste½ tsp Tata Sampann Turmeric Powder1 tbsp freshly chopped coriander leaves + for garnishMethod1. Discard the eye of tomatoes and cut them into wedges. Set aside.2. Heat ghee in a wide pan, add mustard seeds, cumin seeds, and asafoetida and curry leaves. Sauté for a few seconds.3. Add urad dal, green chillies, ginger, chana dal, and peanuts. Sauté for 1 minute.4. Add the green tomato wedges, salt, and mix well. Cover and cook the tomatoes soften. 5. Add ¼ cup water and mix well. Add Tata Sampann Turmeric Powder and mix well.6. Add tamarind juice and mix well. Add cooked basmati rice and mix well. 7. Adjust salt and add chopped coriander and toss well. Take the pan off the heat. 8. Transfer on to a serving plate, garnish with chopped coriander and serve hot.
