Grilled Chicken Satay with Brown Rice
Guard Brown Basmati Rice 2 cups
Water as required (for soaking)
Ingredients for Grilled Chicken:
Boneless Chicken Breasts 2
Ginger garlic paste 1 tbsp
Oil 1 tbsp
Salt to taste
Green chili paste 1/2 tbsp
Soy sauce 1 tbsp
Lemon juice 1 tbsp
Red chili powder 1 tsp
Black pepper powder 1/2 tsp
Oil (for grilling) 2 tbsp
Ingredients for Brown Rice:
Oil 1/4 cup
Garlic (chopped) 1 ½ tbsp
Salt to taste
Black pepper powder 1/2 tsp
Water 5 cups
Soaked rice 2 cups
Green chilies (sliced) 2
Ingredients for Satay Sauce:
Oil 2 tbsp
Chopped garlic 1/2 tbsp
Ketchup 1 cup
Soy sauce 2 tbsp
Salt to taste
Hot sauce 2 tbsp
Red chili flakes 1 tsp
Water as required
Green onion as required

Directions for Satay Sauce:
Now, heat a pan, sauté garlic in oil for a minute or until light golden brown. Add ketchup, soy sauce, hot sauce, salt and water. Cook until desired consistency has reached.
Directions for Grilled Chicken Satay Preparation:
Cut chicken breast into thin sheets and then cut each sheet into two strips.
In a bowl, add strips, ginger garlic paste, salt, red chili powder, green chili paste, soy sauce, lemon juice, black pepper powder and oil. Let it marinate for an hour.
Take each strip and thread it onto the skewer in zigzag motion.
In a pre-heated grill pan, grease some oil and grill your satay for at least 3 minutes from each side. Set aside.
Now take your grilled chicken and coat them with your prepared satay sauce and set aside.
Directions for Brown Rice Preparation:
In a bowl, add rice and water and soak them as per instructions.
Heat oil in a large pan, sauté garlic until golden brown. Add green chilies, salt and black pepper. Cook for 1-2 minutes.
Add water and bring it to boil. When water starts boiling, add soaked rice and cook for 10-15 minutes or until water reduces below the rice.
Cover the lid and steam for at least 20 minutes. Your rice is ready.
Serve hot with Grilled Chicken Satay.
