Grilled Salmon With White Butter | Sanjeev Kapoor Khazana

Marinated salmon pieces grilled with other cut vegetables and topped with creamy buttery sauce.

GRILLED SALMON WITH WHITE BUTTER

Ingredients

250 grams salmon, cut into thick pieces
1 small yellow zucchini, sliced
1 small green zucchini, sliced
1 medium yellow capsicum, cut into triangles
1 medium broccoli, separated into florets
16-20 cherry tomatoes
3 tablespoons white butter
2-3 sprigs fresh rosemary
Salt to taste crushed black peppercorns to taste
Juice of 1 lemon
1 medium white onion, finely chopped
3 tablespoons white wine
1 cup fresh cream
3 tablespoons butter
2 tablespoons oil

Method

1. Place salmon pieces on a plate. Add salt, crushed peppercorns and lemon juice and rub well. Set aside to marinate.
2. Heat 1 tablespoon white butter in a non-stick pan. Add white onion and rosemary sprig, mix and sauté till onions turn translucent.
3. Add white wine and salt and mix. Add cream, stir to mix and bring to a boil.
4. Add remaining white butter and mix till it melts. Add some water, stir to mix and bring to a boil. Remove from heat and set aside.
5. Heat butter and oil in a non-stick grill pan. Add marinated salmon pieces, remaining rosemary sprigs, yellow and green zucchini slices, capsicum and broccoli florets.
6. Sprinkle salt, crushed peppercorns and cherry tomatoes and grill till salmon is fully cooked and grill marks appear on vegetables.
7. Strain the prepared sauce and pour over the grilled salmon and vegetables.
8. Serve hot.
