Marinated salmon pieces grilled with other cut vegetables and topped with creamy buttery sauce.GRILLED SALMON WITH WHITE BUTTERIngredients250 grams salmon, cut into thick pieces1 small yellow zucchini, sliced1 small green zucchini, sliced 1 medium yellow capsicum, cut into triangles1 medium broccoli, separated into florets16-20 cherry tomatoes 3 tablespoons white butter 2-3 sprigs fresh rosemary Salt to taste crushed black peppercorns to taste Juice of 1 lemon1 medium white onion, finely chopped3 tablespoons white wine1 cup fresh cream3 tablespoons butter2 tablespoons oilMethod1. Place salmon pieces on a plate. Add salt, crushed peppercorns and lemon juice and rub well. Set aside to marinate. 2. Heat 1 tablespoon white butter in a non-stick pan. Add white onion and rosemary sprig, mix and sauté till onions turn translucent. 3. Add white wine and salt and mix. Add cream, stir to mix and bring to a boil. 4. Add remaining white butter and mix till it melts. Add some water, stir to mix and bring to a boil. Remove from heat and set aside. 5. Heat butter and oil in a non-stick grill pan. Add marinated salmon pieces, remaining rosemary sprigs, yellow and green zucchini slices, capsicum and broccoli florets. 6. Sprinkle salt, crushed peppercorns and cherry tomatoes and grill till salmon is fully cooked and grill marks appear on vegetables. 7. Strain the prepared sauce and pour over the grilled salmon and vegetables. 8. Serve hot.
