Halve the eggs. Remove the yolks in a bowl and place the egg white shells on a plate. 2. Halve, deseed the avocado and scoop out the flesh in the same bowl. Add tomato, onion, green chillies, lemon juice, coriander leaves and salt and mash well using a fork into smooth paste. 3. Fill a piping bag fitted with a star nozzle with the guacamole and pipe out into egg white shells. 4. Serve garnished with parsley sprigs.
