Gulab Jamun Mousse Shots

Ingredients for Gulab Jamun:
Khoya 1 cup
All-purpose flour 3 tbsp
Semolina 2 tbsp
Baking powder 1/2 tsp
Milk (lukewarm) 1-2 tbsp
Cardamom powder 1 pinch
Oil (for frying) as required

Ingredients for Pistachio Mousse:
Whipping cream 1 ½ cup
Gelatin 2 tbsp
Wall’s Pista & King K (1 tub) 4 scoops of Pista
Pistachios (chopped) as required
Wall’s Pista & King K (1 tub) 1 scoop of King Kulfa


Directions for Gulab Jamun Preparation:
1. In a bowl add khoya, flour, semolina, baking powder, cardamom powder. Mix all ingredients.
2. Add lukewarm milk and knead a smooth and soft dough.
3. Make 12 g dough balls from the dough.
Note: make sure there is no crack on the surface of the balls or they will crack open while frying.
4. Heat oil in a pan, add prepared dough balls and fry over medium low heat for 6-7 minutes or until golden brown.
Note: the dough ball should immediately come upwards when added in oil. If it doesn’t, it means the oil is not hot enough, and if the dough ball turns brown immediately, it means the oil is too hot.
5. Take out the prepared gulab jamun and let them cool at room temperature. Add them in warm sugar syrup for 2 hours or until used.
Directions for Pistachio Mousse:
6. Whip whipping cream in a large bowl until fluffy and soft peaks form.
7. Add Wall’s Pista Ice-Cream and beat again until fully mixed.
8. Add gelatin and fold with spatula until fully incorporated. Refrigerate for 1 hour.
9. In mousse glass, add prepared gulab jamun, pistachios, and pistachio mouse.
10. Top it with scoop of king kulfa before serving and enjoy.
