GULAB JAMUN PARANTHA

Ingredients

4 gulab jamuns
10-12 pistachios, blanched, peeled and slivered + for garnish
5-6 almonds, slivered + for garnish
A large pinch of green cardamom powder
Ready-made parantha dough made with 1 cup of whole wheat flour
Whole wheat flour for dusting
Ghee for applying + to serve

Method

1. In a large bowl, crush gulab jamuns with a fork, add pistachios, almonds and green cardamom powder. Mix well and set aside.
2. Take a portion of the dough and shape it into a ball. Dust with flour and roll it into a small disc. Apply ghee and dust with flour.
3. Place a portion of the gulab Jamun mixture, bring the sides to the centre and seal it, and dust with a little more flour. Roll it into a parantha.
4. Heat a non-stick tawa, cook on both sides till done. Apply ghee on each side and cook till golden brown and crisp.
5. Cut into quarters and garnish with slivered almonds and pistachios. Serve hot with milk and ghee.
