Kaju katli, also known as kaju barfi, is a traditional Indian dessert characterized by its diamond shape, made with cashew nuts, sugar, cardamom powder, and ghee butter. This sweet treat often comes wrapped in an edible silver foil, I have given a twist by adding blue pea flower and some sugar pearls.Ingredients quantity Cashew nuts 2cups (250gms)Sugar 200gmsWater 100gmsBlue pea flower 9-10no.Ghee 1tbspCardamom powder 1tspRose water 1tspblue sugar pearls for sprinkle Method 1. In a mixture jar add cashew nuts in little batches and grind it into powder form.2. Once it is done sieve it properly so lumps are felt.3. Now in pan add sugar , water and cook it properly to almost 1 string consistency4. Now dip the blue pea flower in hot water to release its color.5. Once the sugar syrup reaches the consistency add the cashew powder in it and cook properly.6. To check the kaju katli is ready take a little piece of dough and make a round of it to check whether it is ready or not.7. Once it starts getting thick means its ready to give shape 8. Our dough is ready. 9. Now add ghee, rose water and cardamom powder and mix it properly10. Now remove the dough in a bowl and let it cool down completely.11. Now on a butter paper apply ghee on it and roll the kaju kalti dough on it.12. Now add some blue sugar pearls and blue pea flowers and roll it again.13. Now cut the dough in the kite shape.14.
