HEALTHY CHOCOLATE ICE CREAM RECIPE - With Thick Yogurt, No Added Sugar

In this episode, I'd like to share with you my yummy, creamy and rich chocolate ice cream recipe, without an ice cream machine. I love to add chocolate chips into my chocolate ice cream, but it is totally optional, so feel free to add your favorite nuts instead or don't use any nuts or chocolate chips. Both kids and adults love this amazing ice cream, hope you give it a try!

INGREDIENTS
100 gr. (3.5 oz) dark chocolate (coarsely chopped)
1 cup chocolate chips (optional)
4 real tablespoonful thick yogurt
4 tbsp kaymak (or creme fraiche or clotted cream)
4 tbsp grape molasses
1 tsp instant coffee
2-3 tbsp hot milk or water
A tiny pinch of salt

DIRECTIONS
Combine the coffee with 2-3 tbsp hot milk or water, mix then set aside.
To melt the dark chocolate, transfer it into a heat-proof, large bowl.
For the benmari method: add a little hot water into a pot, place the bowl on top, making sure bottom of the bowl is not touching to the water.
Simmer the pot over medium low heat, until the chocolate is melted, stirring constantly.
Or, microwave it for 30 seconds, mix then repeat the same, until the most of the chocolate is melted.
Remove from the microwave and mix, until the remaining chocolate is melted.
Add 4 tbsp molasses into the melted chocolate.
Add coffee and mix.
Make sure the chocolate is not hot before adding the yogurt, then add 4 real tablespoonful thick yogurt.
Add 4 tbsp kaymak (or creme fraiche) and mix.
Sprinkle a tiny pinch of salt then mix well.
Last but not least, add chocolate chips if desired, mix.
You can portion the ice cream into individual servings, if desired.
Or just smooth the top, chill and serve using an ice cream scooper.
Cover and refrigerate for at least 4 hours or until 30 minutes before serving.
It has a creamy texture when you keep it in the refrigerator.
Make sure to transfer it into the freezer for 30 minutes just before serving, so you don't have a rock hard but a cold and creamy ice cream :)
Garnish as you like, then serve.
