A healthy version of the popular street food from West Bengal.HEALTHY EGG ROLLIngredient4 eggs Dough made with 1½ cups whole wheat flour 1 medium cucumber2 green chillies, finely chopped2 tbsps vinegar + as requiredWhole wheat flour for dusting1 large onion, slicedSalt to tasteA pinch of chaat masala Oil for brushing2 tsps red chilli sauce2 tsps tomato ketchup+ for serving Method1. Halve, scoop and slice cucumber into thick strips.2. To make chilli vinegar, combine green chillies, vinegar and set aside3. Divide the dough into equal portion, dust some flour on work top and roll out into large roti.4. Heat a non-stick tawa, place the roti on it, one by one, and roast till lightly browned on both sides5. Separate egg yolk and egg whites. Add salt to the egg white and whisk well.6. Drizzle few drop of oil on a non-stick tawa and wipe it with a tissue paper. 7. Pour egg white mixture on a same tawa and place roasted roti on top of it and repeat the process again.8. Place prepared roti on a worktop. Place a portion of onions. Sprinkle salt and chaat masala. 9. Place cucumber slices and drizzle some chilli sauce, ketchup and prepare chilli vinegar. Roll it tightly.10. Wrap with butter paper and serve immediately with tomato ketchup.
