Start your day with this deliciously healthy and sweet sandwich loaded with fruits and nuts that provide you vitamins, minerals and healthy fats!HEALTHY FRUIT AND NUT TOASTED SANDWICHIngredients8 whole wheat bread slices2 medium red apples, peeled and cored1 tsp butter + for apply + for toasting½ cup orange juice10-12 roasted cashew nuts¼ cup roasted almonds¼ cup roasted walnuts½ cup grated cottage cheese (paneer)Maple syrup to serveMethod1. Thickly slice apples and set aside.2. Heat butter in a non-stick pan, place the apple slices and cook for 1-2 minutes on both sides. Add orange juice and cook for 2-3 minutes or till the moisture dries up.3. Put cashew nuts, almonds and walnuts in a mortar and pestle and pound to a coarse powder.4. Take cottage cheese in a bowl, add nuts mixture and mix well. Set aside.1. Apply butter on one side of each bread slice and spread the apple mixture evenly on four slices of bread. Spread a portion of the nut-cottage cheese mixture over the apple. Cover with remaining slices of bread.2. Heat a little butter on a grill pan and place the sandwiches and grill for 1-2 minutes, flip and apply a little butter. Grill further for 1-2 minutes.3.
