A delicious snack recipe from Maharashtra made using coriander and gram flourHEALTHY KOTHIMBIR VADIIngredients1½ cups gram flourSalt to taste4 tsps oil + for greasing1½ tsps mustard seeds2 pinches of asafoetida1½ tbsps ginger-garlic paste2 cups chopped fresh coriander¼ tsp turmeric powder¾ tsp red chilli powder2 tbsps roasted and crushed peanuts½ tsp mustard seedsA pinch of asafoetida2 tsps white sesame seedsScraped fresh coconut for garnishMethod1. Grease a small steel thali with oil.2. Add gram flour, salt and 3 cups water in a bowl. Mix well. Set aside.3. Heat 2 tsps oil in a deep non-stick pan, add 1 tsp mustard seeds, a pinch of asafoetida and ginger-garlic paste. Sauté till raw flavour goes away. Add coriander and mix well. Cook on medium heat for 2-3 minutes. 4. Add turmeric powder, red chilli powder, peanuts and salt. Continue to sauté for a minute. Add the gram flour mixture and mix well. Cook on medium heat for 5-6 minutes, stirring occasionally.5. Spread the mixture in the greased thali and flatten it. Set aside to cool down.6. Cut the mixture into 2 inch cubes. 7. Heat remaining oil in a non-stick pan, add remaining mustard seeds, a pinch of asafoetida and white sesame seeds. Add the prepared kothimbir vadis and mix well. Cook on medium heat for 4-5 minutes.8.
