Healthy Kothimbir Vadi | Sanjeev Kapoor Khazana

A delicious snack recipe from Maharashtra made using coriander and gram flour

HEALTHY KOTHIMBIR VADI

Ingredients

1½ cups gram flour
Salt to taste
4 tsps oil + for greasing
1½ tsps mustard seeds
2 pinches of asafoetida
1½ tbsps ginger-garlic paste
2 cups chopped fresh coriander
¼ tsp turmeric powder
¾ tsp red chilli powder
2 tbsps roasted and crushed peanuts
½ tsp mustard seeds
A pinch of asafoetida
2 tsps white sesame seeds
Scraped fresh coconut for garnish

Method

1. Grease a small steel thali with oil.
2. Add gram flour, salt and 3 cups water in a bowl. Mix well. Set aside.
3. Heat 2 tsps oil in a deep non-stick pan, add 1 tsp mustard seeds, a pinch of asafoetida and ginger-garlic paste. Sauté till raw flavour goes away. Add coriander and mix well. Cook on medium heat for 2-3 minutes.
4. Add turmeric powder, red chilli powder, peanuts and salt. Continue to sauté for a minute. Add the gram flour mixture and mix well. Cook on medium heat for 5-6 minutes, stirring occasionally.
5. Spread the mixture in the greased thali and flatten it. Set aside to cool down.
6. Cut the mixture into 2 inch cubes.
7. Heat remaining oil in a non-stick pan, add remaining mustard seeds, a pinch of asafoetida and white sesame seeds. Add the prepared kothimbir vadis and mix well. Cook on medium heat for 4-5 minutes.
8. Serve hot, garnished with scraped coconut.
