Stir in garlic paste and saut onions until translucent. Add chopped celery and carrots and cook another minute. Add chopped mushrooms. Cook for 10 minutes, until reduced in size and sweating. Add wild rice, dried thyme, dried sage, salt, pepper, and broth. Bring to a boil.Lower heat to a simmer and cover pot.Let simmer 45 minutes, until rice is cooked (or according to package directionscook time will vary based on the kind of rice you use).Serve warm, topped with nondairy yogurt, vegan sour cream, or your favorite toppings!Per 1 cup, yields 8112 calories | 2g fat | 21g carbs | 3g fiber | 4g sugars | 4g protein Herbed Citrus Olives:1 cup kalamata olives1 cup green olives cup extra virgin olive oil orange juice, & zest1 lemon, juice & zest2 Tbsp parsley2 Tbsp cilantro6 garlic cloves, sliced tsp crushed red pepper (optional)blend.
