Healthy Natural Sweetener: Date Caramel Sauce Syrup Recipe

Date syrup/caramel sauce that is gluten and refined sugar free, paleo, vegan and low on the glycemic index. Easy, 1 ingredient recipe + better for you. This sauce/syrup is great on ice-cream, pancakes, oatmeal and even in coffee, smoothies and more. It can be used just like agave/honey.

Ingredients
1 c pitted, chopped dates
2 c hot water
*Optional: coconut sugar

Instructions
Soak all the dates with both cups of hot water for 15 minutes,
Without draining, blend everything up.
Strain through a fine mesh sieve.
You can keep it raw just as is or cook.
Heat on medium until it bubbles, thickens and reduces by half for a caramel like sauce.
For a more syrup like consistency, cook until the sugars caramelize further, it takes on a darker brown color and reduces by -1/4.
Cool and serve as desired.
