A healthy take on the classic samosa recipe.HEALTHY SAMOSAIngredientsDough1½ cups refined flour½ tsp carom seeds (ajwain)Salt to tasteStuffing2 medium potatoes, boiled, peeled and mashed1 medium sweet potato, boiled, peeled and mashed2 tsps + 1 ½ tbsps ghee ½ tsp cumin seeds2 green chillies, finely chopped1 inch ginger, finely chopped½ cup green peas, boiled1 tsp red chilli powder½ tsp dried mango powder (amchur)½ tsp garam masala powder2 tbsps chopped fresh corianderGreen chutney, for serving Tomato ketchup, for servingMethod1. Preheat air-fryer to 180˚C.2. Heat ghee in a nonstick pan, add cumin seeds. Once the cumin seeds start to change colour, add green chillies and ginger and sauté till the raw flavour of ginger goes away.3. Add green peas, red chilli powder, dried mango powder, garam masala. Mix well, add salt, ¼ cup water and mash well. 4. Add potatoes, sweet potato and mashed well for 2 -3 minutes.5. Add coriander, mix well. Transfer in a bowl and set aside to cool down.6. For the dough, mix together refined flour, carom seeds, salt, and 1½ tbsps ghee. Add sufficient water and knead into stiff dough. Cover with damp muslin cloth and set aside for 10 minutes. 7. Apply ghee on the worktop and roll out into thin oblong sheets. Cut it into half.8. Twist each halved sheet to shape into a cone, stuff with some potato mixture and apply water on edges, bring them together and press to seal and shape into samosas.9. Grease air-fryer tray with ghee. Place prepared samosas in air-fryer, brush with some ghee and bake for 15-20 minutes.10.
